Gluten Free Cheesy Breadsticks
Cheesy breadsticks just feels like the rational move to follow up with after making homemade gluten free pizza dough, ya know?
I mean, once you make the dough you’re basically halfway there. Use half the dough to make these buttery, garlicky cheese breadsticks and use the other half to make a takeout worthy pizza. It’s just good math.
Or you can save and freeze the second half of dough to use later. Your future self will thank you for it.

Bite-Sized Recipe Steps
- Make gluten free dough:
- Follow steps 1-4. After you knead and divide the dough into 2 equal portions, cover and set the other half aside to use later.
- Shape dough:
- Roll or stretch the dough out on to shape, about 8×12-inches large so it fill fit inside a 9×13-inches (22×33 cm) baking tray.
- Proof: Cover with foil, plastic wrap or a tea towel and set aside for 1-2 hours to rise in a warm environment.
- Toppings: Combine melted butter, garlic and seasoning then brush over the top and sides of the dough. Cover evenly with cheese.
- Bake: Bake for about 12-15 minutes until the edges are golden and the cheese bubbly.
↳Shaping the dough:
I like to stretch and press my dough into shape directly on the baking sheet so I know how big to make it. If you find it easier to do with a rolling pin, just roll the dough on a large piece of parchment paper outside the pan first, then move the pan when you’re done.
Recipe Tips & Variations
Make it Vegan
- Swap the butter & cheese for vegan butter or olive oil and vegan mozzarella or your favorite melty vegan cheese.
Make it Low FODMAP
- Skip the garlic. If you really want to impart a garlic-like flavor, you can use garlic-infused olive oil instead of or in addition to (add 1 tbsp) the melted butter topping. Or just leave it out altogether.
Swap the Cheese
- Feel free to use whatever shredded cheese or blend of cheese you prefer!
- Keep in mind that high moisture cheeses (like fresh cheese or cheese that comes in water) will leak moisture as it bakes which could make your breadsticks a bit soggy. Low moisture cheeses (firm textures) are best.
Make Manakish
- Swap the garlic butter mixture for olive oil then top with a generous sprinkle of za’atar spice and about 1/2 cup mozzarella cheese (optional).

Gluten Free Cheesy Breadsticks Recipe
Soft, chewy, cheesy and delicious - complete your pizza night with these cheesy gluten free breadsticks!
Ingredients
- 1/2 homemade gluten free pizza dough (about 445g or 1 lb)
- 2 tbsp melted butter, salted or unsalted (28g)
- 1 tsp garlic powder or 2 fresh garlic cloves, minced*
- 1 tsp Italian Seasoning
- 1 tsp chili flakes (optional)
- 2 cups low moisture mozzarella cheese, grated (225g)
Optional
- fresh herbs, parmesan cheese, chili flakes for topping
- marinara or pizza sauce for serving
Instructions
- Pan Prep: Line a large, baking sheet (9x13-inch or 22x33cm) with parchment paper. Set aside.
- Dough Prep: Prepare pizza dough through step 4, knead & divide. Use the other dough half to make pizza or freeze for later.
- Shape: Lightly flour the parchment paper-lined baking sheet. Press and stretch the dough directly on the baking sheet until it fills up most of the pan. You can also roll the dough outside of the pan then transfer to the baking sheet if that's easier.
- Proof: Cover with plastic wrap or a clean kitchen towel and place in a warm, draft free environment. Let the dough rise for about 2 hours.
- Preheat oven to 425°F (220°C).
- Toppings: Combine butter, garlic, Italian seasoning and chili flakes (if using) in a small bowl. Brush all over the surface and edges of the dough. Sprinkle the cheese evenly over the top.
- Bake in the middle of the oven for about 12-15 minutes until the cheese is bubbly and the edges are golden brown.
- Slice & Serve: Remove from oven, then slice into breadsticks. Serve as is or garnish with additional toppings if desired (fresh herbs, parmesan, chili flakes, etc) and enjoy.
- Leftovers: Cool to room temperature then store in an airtight container in the fridge up to 1 week OR sealed tight in the freezer up to 3 months.
Notes
- Dough Yield: My gluten free pizza dough recipe makes just under 2lbs of dough. You only need half the dough to make these breadsticks. Use the other half to make make pizza or freeze it for another time. Check the notes under that recipe for freezing & thawing instructions.
- Make it Low FODMAP: omit the garlic.
