This peach syrup is the perfect thing to make if you’ve got a couple of peaches that need using. No need for added heat or water! Simply toss the ripened fruit with honey, lemon juice and freshly grated ginger and let the natural sugars in the honey draw out the delicious, peach juice.

- There’s no cooking or heat involved which means the fresh peach flavor shines through.
- Cooked peaches have a sweeter, jammier, more muted peach-flavor. Opting for a gentle, no-cook method allows the natural sugar in the honey to pull out the fruit juice which creates a fresh, floral, delicate flavor that’s very peach-forward.
- I used honey, but you can make this using other sugars/sweeteners.
- The mechanics of how this recipe works (maceration) just needs sugar to get the job done – refined and unrefined sugars work. You can swap out the honey for maple syrup or agave if you’d like a vegan option or white/brown sugar for something cheap and easy.
- How to use it:
- This syrup is best used in sauces, marinades, cocktails, lemonades and other recipes where you want the peach flavor to shine through. Enjoy it fresh, simmered or cooked as a glaze. Keep in mind that it’s basically just honey & fruit juice and not a concentrated syrup so I don’t recommended using it as a substitute for sugar or liquid sweetener in baked goods.

A few ideas on how to use it:

Drinks
- Iced Drinks – Stir in to lemonade, iced tea and other chilled drinks to add an extra sweet & fruity flavor.
- Cocktails & Mocktails – Use in place of simple syrup to make your favorite cocktails or mix it into a glass of sparkling water and garnish with fresh fruit to make a quick & easy mocktail.
- Hot Drinks – Add a splash to herbal teas and hot cider.
Breakfasts, Desserts & Baked Goods
- Pancakes & Waffles – Use in place of or in addition to maple syrup. Just keep in mind that it’s not as thick as maple syrup.
- Oatmeal & Yogurt – Stir into oatmeal and yogurt bowls to add a little extra sweetness without the refined sugars.
- Fresh Cakes & Muffins – Use a pastry brush to brush over freshly baked sponge cake, loaves, muffins etc. Do this while everything is still warm so the flavor can soak into the cake.
- Ice Cream & Whipped Cream – Stir into vanilla ice cream or drizzle over freshly whipped cream with fresh fruit for a super simple dessert.

Honeyed Ginger Peach Syrup
Use this peach syrup to flavor your favorite summer drinks, mix in dressings & vinaigrettes, brush over freshly baked goods or drizzle over pancakes and waffles.
Ingredients
- 2 large peaches, diced (about 300g)
- 1 tbsp fresh ginger, grated
- โ tsp sea salt
- 2 tbsp lemon juice (30 ml)
- ยฝ cup runny honey (170g)*
Instructions
- Add all ingredients to a medium bowl then stir together until evenly combined.
- Cover and set aside for at least 2 hours or up to 1 day. The longer you leave it, the stronger the peach and ginger flavor will be.
- Place a fine mesh sieve over a different bowl or storage jar then pour the peach mixture into the sieve to strain out the solid pieces. Let the syrup drip through the strainer without pressing or mashing the peaches. You'll get about ยพ cup - 1 cup right away, but if you leave the juices to strain over the bowl for about 10 minutes or so you'll end up with another few tablespoons of syrup.
- Keep stored in an airtight container or jar and keep refrigerated for about a week or freeze up to 3 months.
Notes
- Peach Type: Both white and yellow flesh peaches work well here. White peaches have a more delicate, floral flavor that's not very acidic. Yellow peaches are more tart and have a more intense peach flavor.
- Honey: If your honey is solid or not in a pourable state, gently warm it up in a small sauce pan on the stove top over a low heat until it's easy to stir and pour.
- Honey Alternatives: You can swap out the honey for equal amounts of pure maple syrup, agave or brown rice syrup or ยพ cup white or light brown sugar.
- Peach Solids: You can discard, eat or freeze the remaining peaches as you see fit. They'll be quite soft after straining but they're great mixed into smoothies, ice cream or served with pancakes, waffles, etc.
