Ok, listen. Anyone who has ever baked with coconut flour knows that it can be a real diva to work with. It’s an extremely absorbent, it’s got a slightly coconut-ty taste and it should be used carefully in moderation.
That being said, there are a ton of great reasons to love and cook with it. When done right, baking with coconut flour will result in some seriously delicious and surprising stuff. Coconut flour is:
